Roasted, Spiced Oranges on Angel Food Cupcakes #12wksxmastreats

A few weeks ago I picked up a package of mandarin oranges at the grocery store because I hadn't had them in a while and thought they sounded good. A few days after that I started thinking about ways I could bake with the oranges to bring out their sweet flavor in the best possible way. I decided that roasting them was something I don't remember seeing before and it would showcase their juicyness. I paired these with angel food cake because I didn't want a cake that was to heavy. I was thinking about a dessert that was light and refreshing while still reminding me of autumn.

Spicy, Moist Gingerbread for Secret Recipe Club Reveal Day!


Gingerbread is a standard for the holidays in my mind. It comes in all different forms, cookies, houses, cupcakes, squares...and the "gingerbread" flavor is in lots of different foods, biscotti, coffee, fudge...Sometimes there's nothing better than a warm fire and a big piece of spicy, moist gingerbread.
Cupcakes make that goal easier. There are less pans to scrub, and they're portioned controlled (my favorite part).

Pineapple Rum Tart! Week 11 of 12 Weeks of Christmas Treats #12wksxmastreats



This tart has a smooth rum flavor and a tart pineapple flavor under a sweet crust and fluffy homemade whipped cream. Who wouldn't want that?!? During the holiday season sometimes people get excited and bake with alcohol. On one hand it seems like a waste of alcohol, but on the other hand, the flavor is usually completely worth it! This Pineapple Rum Tart is definitely on the other hand. It's completely worth it!

Caramel Pecan Chocolates for #12wksxmastreats



Is there anything better than a brown sugar caramel filling wrapped around pecan pieces and enclosed in chocolate? I don't think so either, until I find something else just as delicious of course. But that's another story. I absolutely love chocolates though...milk, dark, white, fruit filled, caramel filled, nut filled. I like almost all of them. One of my favorite things about this recipe is that the filling comes together so quickly with basic ingredients. No candy thermometers. I may have two of them but I still love recipes for candy that don't use them.

Black Bean Breakfast Enchiladas (Gluten-Free)




These aren't just any enchiladas. These are made with homemade egg "tortillas"! They are thin, crispy on the edges, and wonderful with this black bean filling for a hearty breakfast or dinner. I didn't se out to make these gluten-free. I just thought that egg "tortillas" were a fun idea. Now I know they are! I will be making them for a long time because they're easy and so good!

Peanut Butter & Banana Oreo Bites



With only 4 ingredients these little cups are so easy to make and addicting to eat! When I took this picture there were maybe eight left for pictures. The recipe makes three dozen. Even my son loved these and kept asking for just one more. I almost venture to say these are healthier because they have banana in them. Anything with banana is healthy right? :)

Broccoli & Mushroom Rigatoni for Meatless Monday!



Sometimes on a Monday there's no dinner plan. I've had a fun weekend and just don't feel much like cooking. When that happens, I want to make something quick and easy that everyone will like. That...is what this dish is. Really, it's not even mine. It's something my husband makes. He likes to cook dinner and be creative with recipes. My favorite part is the semi-crunchy, fresh vegetables, and the sauce. Easy but flavorful sauce. He soaks it up with bread, I agree that's a good idea.

Here we are at week 3 of the 12 Weeks of Christmas Treats Blog Hop! I know you're still in disbelief that I'm posting Christmas treats, but isn't this fun :)? These are so easy to make (they use a box mix), kids can help, and everyone who eats them will love them for their design and their flavor. Cupcakes really are the perfect baked good to make with kids because it's so much fun to frost them and put sprinkles or whatever they want to on them.

Pesto Cheese Ravioli with Crispy Cheese Topping for Meatless Monday!




Ravioli is one of the ultimate comfort foods for me. I know some people love soup and some people love meat and potatoes, but for me? Ravioli. It's always warm with a slightly sweet or spicy sauce on top and a creamy filling that's bursting with flavor. The crunchy topping on this ravioli makes it one of my favorites. The basic flavors of this recipe combine to make something that will keep you coming back for more.

Cinnamon Muffins with Oatmeal Streusel Topping



It's almost officially fall, as I've said before. One of the first ingredients I think of for autumn recipes is cinnamon. I love cinnamon, and it reminds me of "harvest", which makes me think about Thanksgiving. We are no where near Thanksgiving (sort of) considering that Halloween is coming up soon, but that's okay. I could really eat cinnamon anytime of year. You know what goes well with cinnamon? Crunchy streusel. You know what goes well with almost any breakfast treat? Crunchy streusel.

I know it's Tuesday and this is a Meatless Monday post but this dish is so good I wanted to share it (and I wasn't able to post yesterday, oops!). Pumpkin Pecan Bourbon Butter



Is it Fall yet? It will be in 10 days, so that's close enough for me! One thing I love about Fall is the "butters". Apple butter, pear butter, rhubarb butter (sounds delicious right?)...pumpkin butter..I think I would love to wake up and eat muffins with all sorts of fruit butters. This Pumpkin Pecan Bourbon butter is something that's so nice to wake up to. It goes so well on a variety of foods and I'm sure you can think of some other foods that it would be so good on also!

Secret Recipe Club reveal day! Lemon Pound Cake with Blueberry Compote



Today is secret recipe club reveal day! It happens every month and it's so much fun! I chose to make a lemon pound cake with blueberry compote from the blog that I was assigned to. I don't make pound cake often but this recipe may change my mind. My previous attempts of pound cake came out as loaves of cake so dense they weren't good at all. This one is soft and fluffy while still having a dense feel to it. Perfect for topping with the blueberry compote or maybe just some fresh strawberries. For winter, maybe some baked cinnamon apples would be delicious too!

A Warm and Crusty Garlic Boule



A warm and crusty loaf of garlic bread is one of my favorite foods to eat. I believe that a really good loaf of bread doesn't necessarily need butter but could be enhanced by it. I also love lightly toasted bread with a bit of butter or just bread straight from the oven (I've burned myself more than a few times during the excitement of a loaf just out of the oven that smelled wonderful).

Apple Pie Ice Cream Sandwiches



We are getting into apple season and these Apple Pie Ice Cream Sandwiches are a perfect treat while it's still warm outside but you're ready for an autumn flavored dessert. The sandwiches are made with snickerdoodle cookies encasing creamy homemade apple pie ice cream dotted with fresh cinnamon apples and a little brown sugar. If you don't have an ice cream maker, that's okay, I will suggest some other ways to make this recipe a little easier (and quicker if you need to save some time).

Peach Crisp for 1 (or 2)


This is one of the easiest peach crisps you will ever make. I spent years being completely recipe dependent on dessert and baking recipes because from a scientific standpoint I was afraid to change anything in the recipe for fear of it not turning out the way I wanted it to. Needless to say, I got over that fear at least a few years ago and I've never looked back! Playing with recipes and tossing ingredients in a bowl as I scribble down the amounts on a scrap piece of paper is one of my favorite activities now. Have you never tried it? You should!

Meatless Monday! Vegetable Bibimbap



This beautiful bowl of vegetables and rice is definitely worth trying if you have never tried it before! The vibrant flavors of the mushrooms, carrots, and cucumber really come out in this dish and combine so well with the slightly runny egg yolk and brown rice. I think I love this meal and will make it often. The fresh scallions on the top really add to the "fresh" flavor of the dish that keeps you coming back for more!

Baked Dark Chocolate Doughnuts


 

If you haven't noticed, I love doughnuts. Pretty much all doughnuts, well...most doughnuts. But, I love these doughnuts and that's what really matters right? These are cake-like dark chocolate doughnuts that are baked, not fried. I've made fried doughnuts before and they're great but so bad for you even though they're so good. Just like these, except these are better for you. Not good, but better than fried :) so it's like they're good for you.

Meatless Monday! Caprese Stuffed Pitas



Summertime here on the east coast and get really hot and not very many people feel like cooking when it's sweltering outside. I like to look for meals that either don't involve cooking or have very little cooking to them. Food prep I don't mind so much, but nobody really wants to turn on the oven when it's in the 90's outside (or hotter). This is where sandwiches come in. They're usually quick and easy to put together with a minimal amount of cooking.

Upside Down Mini Apple Cakes



There are usually at least a few recipes that people remember with happy thoughts from when they were young. I remember recipes like my grandmothers vanilla sauce but I also have happy food memories. When I would come home from school my mom would make the little plates of snacks themed for the holiday. My favorite was St. Patrick's Day. I would have something like celery with green tinted ranch dressing, maybe pickles, maybe green tinted milk, or whatever my mom could come up with that would be green.

Meatless Monday! Tomato Frittata



If you're looking for an easy weeknight meal, this is it! A frittata is so simple to put together, you can add anything that you want to, and it doesn't take more than 20-30 minutes (depending on how wild you get with ingredients). Fresh tomatoes are one of my favorite foods when they're in season because their flavor is so rich and sweet. They just make everything I add them to taste even better than I thought it could.
