Apple Cider Snickerdoodles


These are a lovely combination of sweet apple cider, cinnamon, and a little sweet from the sugar. I know I put a teaser on Facebook two days ago if anyone saw it saying I would post these yesterday but then after they cooled completely (because of course I got excited and immediately posted about them) then I decided I wasn't completely happy with them. They were too chewy and the apple cider was to strong. But I changed the recipe and now they are perfect! At least to me. I don't ever want to share a recipe with you all that I'm not completely happy with. I am completely happy with these though.

Meatless Monday! Southwestern Salad



Welcome back to Meatless Monday on this warm summer day. Today I am sharing Southwestern Salad with you which is cool and refreshing! I will say I did put avocado on this salad after we had eaten half of it because I forgot (oops). We were sitting there eating it for dinner and my husband said "avocado would make this even better". I jumped up and cut it up really quick because it was supposed to be on there...:) It does make it even better though. The fresh cilantro dressing doesn't hurt.

Individual Plum Upside-down Cakes


Summer is slowly coming to a close and autumn is almost here. Plums seemed like the perfect fruit to use in a warm dessert. This recipe only makes four little cakes so don't feel bad if you eat two in one sitting :). Think of it as "there's fruit!". Upside down cake always seems so welcoming because of it's warmth and the sauce that's already there making the cake a little more sweet because of the natural fruit juices (and a little sugar).

Meatless Monday! Quick and Easy Potato Soup


I know it's August and crazy hot in most places but it's been rainy here in NC for a few days and that makes me want soup. Warm and creamy soup always helps me to pretend like it's fall, even when it's not actually cold outside. Rainy will do though. It's a cold rain so I will take it. Potato soup is a recipe that can be made millions of different ways, and that's one of the reasons I like it so much. This recipe has directions for a slow cooker or for the stove to make things easier.

Apple Hand Pies!


Is there anything better than an apple pie? Tiny apple pies maybe, that fit in your hand? Yes please. That helps with not eating half a pie but not so much with not eating half the batch. Crisp and slightly sweet on the outside with a warm cinnamon inside these are a treat to be had. Unfortunately for my husband I whisked all but a few of them away to take with me to meet some friends. He was sad, but they were happy. I will just have to make him some more!

Root Beer Float Cupcakes


I am pretty sure that vanilla bean paste is one of my favorite flavorings in the world. Just look what it does for these cupcakes. The beautiful little specks add suck depth and flavor to the frosting. It's summer and so root beer floats are perfect for this time of year because they're cold and creamy. If you were feeling so inclined you could also just refrigerate these cupcakes and serve them cold. Same thing right? :)

Flourless Fudge Cookies


I've been making some gluten-free recipes lately to find recipes that I like for someone that requires gluten-free treats. I came across these on the King Arthur Flour website and thought they sounded really good. They have a nice crackly outside and rich, fudge-like, and chocolatey inside. They are only made with five ingredients and they are super quick to throw together. The hardest part is letting them cool completely before eating one!
