Chocolate Cupcakes with Vanilla Bean Frosting & Caramel

Do you remember the Vanilla Bean Porter Caramel Sauce I posted a few days ago? I decided that instead of eating it all straight off the spoon I should do something fun with it. Then, the cupcakes with the really long name were born. These little beauties are pretty darn awesome if you ask me, but of course I made them, so sometimes I can be bias. I will say that of course I don't like the outcome of everything I make. These? I'm quite proud.

Vanilla Bean Porter Caramel Sauce

Caramel sauce is one of my favorite toppings. It's such a versitile ingredients because it has so many great applications. Cupcakes, cakes, brownies, ice cream, pastries, anything sweet really. This particular sauce is made with a vanilla bean porter which adds a nice rich flavor to the caramel. Any porter or stout could be used but I thought the vanilla bean would be really nice for what I was looking for.

Quick Chocolate Pudding with Black Cherries

Chocolate pudding is something I tend to only think of when I see it in grocery stores in the little plastic cups, but it can be so much more. It can be a decadent dessert that is enjoyed slowly by the spoonful instead of eaten hastily as just a snack. There are so many flavors available now in stores but I really love a good, rich chocolate pudding.

Meatless Monday! Vegetable & Salsa Chowder

The Super Bowl is over and done but this chowder recipe will be prepared a lot more in the next few months, especially. I'm always on the lookout for a vegetarian soup that's not black bean (although I love it) or just vegetable soup. I know there are a lot out there but I tend to not eat much soup because of the repetition. When I saw this recipe I HAD to make it, and soon. I'm sure glad I did.

Meatless Monday & Secret Recipe Club Reveal Day!

Today is an exciting day! For me at least...I recently joined The Secret Recipe Club and today is my first reveal! Yesterday was also the Super Bowl (as you probably know) and it was the perfect time to try out a new recipe, especially a dip. A healthy dip too, with black beans, onions, and a few other ingredients, all topped with delicious and melty cheese!
