Don't you love the blue dishes? My sister found them for me and I absolutely love them! I was thinking about all of the wonderful desserts I could put into them and thought these toasted almond covered Lamingtons would be perfect. I had never heard of Lamingtons when I was assigned this challenge so I was really excited to read about them and make them!<br>

I would like to say I absolutely LOVED this challenge. The golden crust that's crunchy and buttery, the homemade caramel that sits in all the nooks on the tarte tatin so they're in every bite...I used to be a professional baker and I've never made puff pastry from scratch. If you have some patience it's really easy and the results are definitely worth it. In my personal opinion when something like this is made I like to use more than one type of a fruit. I ued two types of apples in this recipe (Braeburn and Granny Smith). <br>

I get so excited when I make something new and this is something I had a lot of fun making and would definitely make again. One of the reasons I really like this recipe is because you can fill them with anything. I made a pork asado filling that worked beautifully, but you could make any filling that you want to, sweet or savory.<br>

One of the things I love about being in Daring Bakers is when we are given recipes for desserts that I've never heard of before. I haven't seen anything even close to this Esterhazy Torte (also known as the Hungarian Dream) but I'm so glad that I have now because it was delicious. The inside layers of the cake are dense but it's filled with a delightful creamy butter and ground nut mixture.<br>

It's been a while since I've posted any new desserts but I think this is a great one to get back into it again. Breakfast itself has always been so difficult for me to get along with. I have always preferred lunch and dinner food, even at breakfast time. I have always liked pastries though and so this recipe caught my eye. It's filled with nuts, cinnamon, and sugar! I love how easy it comes together and the crispness of the outside with the softness of the inside. I also made some awesome Ultimate Chocolate Chip Cookies to go along with breakfast of course!</div>

It's officially fall now and to me that means soup weather. I love coming home and making soup for dinner on a chilly night (or having it in the slow cooker). There are so many different ways to make soup that I could probably have it every night for a year and not have the same one twice. This Slow Roasted French Onion Soup is so delicious that I could probably have it once a week. It takes a little time but not much effort, which is okay with me. Can't you just taste that crusty, crunchy, cheesy bread with the rich broth and caramelized onions?<br>

I've made a fair amount of brownies recently but when I saw these Chocolate Chip Fudge Brownies on the blog that I was assigned to for the Secret Recipe Club then I <i>had</i> to make them. They taste fluffy like a marshmallow but fudgy like a brownie should be (in my opinion). I did top them with a Chocolate Marshmallow frosting which was a lovely addition. Then there's creamy, slightly sweet, soft, and fudgy all in the same bite!<br>

I love Mexican food, I always have. Almost every time I go out to eat it's to a Mexican restaurant. I went out to eat a few months ago and had these amazing Molten Mexican Chocolate Brownies that were soft and molten on the inside and and had a crunchy crust, all with a hint of spice that you taste a minute after you've eaten a bite. That's one of my favorite kinds of foods, the sneaky spicy ones. These are like those, sneaky spicy. Of course they don't have to be, but they're delicious so I would keep the sneaky spice.<br>

As trends go, I think that the chocolate chip cookie dough one is almost always on top. People love cookie dough, especially chocolate chip cookie dough. I feel like I see it everywhere, on brownies, in cakes, in fudge. There is nothing wrong with that of course (see above), because it's absolutely delicious.<br>

Carrot Cake always makes me think of Spring although I'm not sure why. Maybe it's the carrots associated with the season. Croissants are a recipe people shy away from, but with a little time and a small amount of effort they can be a wonderful breakfast treat in your kitchen! I have filled some of these and left some of them plain (note the one in the corner that looks like a traditional croissant). I love the layers when you pull the apart, and there is not much that is like that soft interior and crunchy, flaky exterior.<br>

Is there really anything better than peanut butter, chocolate, and marshmallows? (or to be more specific...chocolate peanut butter!) It's one of my new favorite combinations! A few weeks ago I picked up a package of mandarin oranges at the grocery store because I hadn't had them in a while and thought they sounded good. A few days after that I started thinking about ways I could bake with the oranges to bring out their sweet flavor in the best possible way. I decided that roasting them was something I don't remember seeing before and it would showcase their juicyness. I paired these with angel food cake because I didn't want a cake that was to heavy. I was thinking about a dessert that was light and refreshing while still reminding me of autumn.<br>

Gingerbread is a standard for the holidays in my mind. It comes in all different forms, cookies, houses, cupcakes, squares...and the "gingerbread" flavor is in lots of different foods, biscotti, coffee, fudge...Sometimes there's nothing better than a warm fire and a big piece of spicy, moist gingerbread.<br>
Cupcakes make that goal easier. There are less pans to scrub, and they're portioned controlled (my favorite part).<br>

This tart has a smooth rum flavor and a tart pineapple flavor under a sweet crust and fluffy homemade whipped cream. Who wouldn't want that?!? During the holiday season sometimes people get excited and bake with alcohol. On one hand it seems like a waste of alcohol, but on the other hand, the flavor is usually completely worth it! This Pineapple Rum Tart is definitely on the other hand. It's completely worth it!<br>

Is there anything better than a brown sugar caramel filling wrapped around pecan pieces and enclosed in chocolate? I don't think so either, until I find something else just as delicious of course. But that's another story. I absolutely love chocolates though...milk, dark, white, fruit filled, caramel filled, nut filled. I like almost all of them. One of my favorite things about this recipe is that the filling comes together so quickly with basic ingredients. No candy thermometers. I may have two of them but I still love recipes for candy that don't use them.<br>

These aren't just any enchiladas. These are made with homemade egg "tortillas"! They are thin, crispy on the edges, and wonderful with this black bean filling for a hearty breakfast or dinner. I didn't se out to make these gluten-free. I just thought that egg "tortillas" were a fun idea. Now I know they are! I will be making them for a long time because they're easy and so good!<br>

With only 4 ingredients these little cups are so easy to make and addicting to eat! When I took this picture there were maybe eight left for pictures. The recipe makes three dozen. Even my son loved these and kept asking for just one more. I almost venture to say these are healthier because they have banana in them. Anything with banana is healthy right? :)<br>

Sometimes on a Monday there's no dinner plan. I've had a fun weekend and just don't feel much like cooking. When that happens, I want to make something quick and easy that everyone will like. That...is what this dish is. Really, it's not even mine. It's something my husband makes. He likes to cook dinner and be creative with recipes. My favorite part is the semi-crunchy, fresh vegetables, and the sauce. Easy but flavorful sauce. He soaks it up with bread, I agree that's a good idea.<br>

Here we are at week 3 of the 12 Weeks of Christmas Treats Blog Hop! I know you're still in disbelief that I'm posting Christmas treats, but isn't this fun :)? These are so easy to make (they use a box mix), kids can help, and everyone who eats them will love them for their design and their flavor.
