Cherry & Coke Brownie Bites

These little brownie bites are so cute and suspiciously reminiscent of Black Forest Cake. I didn't plan it that way but that's how they turned out. I made these with Coke to put a twist on a Coke Cake with Coke brownies as my goal. I think the cherry in the center looks pretty and really adds to the cherry flavor of the bites. The star shaped frosting also makes adorable flowers if you wanted to go that direction. I put white centers in a few of them (I didn't take pictures though) and they were really cute.

You could also use fresh cherries probably and it would give it a different but still delicious cherry flavor. I was also thinking for Christmas green cherries in some and red cherries in others might be fun :). I'm a little wild like that, and I do know it's June. I have a while to go before I think about winter treats. Let stick with these for now :) Happy Baking!

Cherry & Coke Brownie Bites
Makes 30 mini brownies

Ingredients:
- 1 cup Coke (Cherry Coke if desired)
- ¾ cup granulated sugar
- ½ cup butter, melted
- ¾ cup light brown sugar
- 1 teaspoon vanilla extract
- 2 whole eggs
- ¾ cup all-purpose flour
- ¼ teaspoon salt
- ½ cup cocoa powder
- ½ cup mini chocolate chips
- 30 maraschino cherries

Frosting:
- ½ cup butter
- 1 cup powdered sugar
- 1 packet Cherry Vanilla Flavor Mix (Duncan Hines)

Directions:
1. Preheat oven to 350F. Grease 30 mini muffin cups and set aside.
2. In a saucepan stir together Cherry Coke and granulated sugar. Bring to a boil and boil for 10 minutes until it reaches a syrupy consistency. Set aside to cool for about 10 minutes.
3. In a mixing bowl, mix together butter, brown sugar, and vanilla. Add eggs and mix until well blended. Add the Cherry Coke mixture and mix until combined.
4. Sift together the flour, salt, and cocoa powder. Add into the butter mixture and stir until well blended. Stir in mini chocolate chips.
5. Evenly divide the batter between the prepared mini muffin cups filling them about 4/5th’s full.
6. Place one cherry in each cup pressing until it is almost covered.
7. Bake for 15 minutes. Let cool 5 minutes, then remove from pan onto a cooling rack.
8. Frosting: In a mixer blend together the butter, powdered sugar, and Cherry Vanilla Flavor Mix until blended well. Pipe or spread the frosting onto the brownie bites. Serve.

    1. Thanks for the invite Dawn. I'm glad that you like them. A bit of whipped cream as the center of the frosting might round out a nice Black Forest feel to the cake, or chocolate shavings :)

  6. I don't know if I'm reading this correctly. Where and when are you supposed to add the coke and sugar syrup mixture? I have read the directions 3 times and don't see it mentioned. I assume you are to add it to the batter but I've been told never assume anything. This sounds amazing and I'm wanting to try but I also don't want to mess it up.

  7. What if I want to make cakes and not brownies......... should I just add baking soda?

    1. That's a great question. I've never tried to change this recipe to a cake but I don't believe that adding baking soda would be enough to make a good cake texture. If I were going to try to make a Cherry Coke Cake, I would use my Dark Chocolate Cupcakes recipe and make a two layer cake with it instead. I would substitute the coffee with Cherry Coke. I hope this helps, if you try it let me know how it turns out :). I may actually try it myself too!
