Easy Espresso Chip Ice Cream Sandwiches


So I know I've been missing for a while. It's been kinda crazy though with lots of stuff going on so I've been constantly thinking about what to make for you all but not actually had the time to make anything. Hopefully I can keep posting in a pretty regular basis until I get less busy at home then I devote more time to delicious treats again. On to the easy sandwiches!


I whipped up these super easy sandwiches with homemade brownie cookies but I bought the ice cream because my ice cream maker doesn't work anymore :(. I have a few recipes for ice cream that don't use an ice cream maker but I need to get around to making them. The hot days of summer will probably help me want to make cold ice cream :). So, if the cookies look familiar you may have seen them here. That is the recipe for cookies that I used. Then I just scooped in some ice cream and served them immediately. 


The cookies need to be freshly  made so that they have the fudgy appeal then you can freeze them for a little bit but remember that frozen cookies sometimes get crunchy. Mine were a little crunchy the next day but my husband liked them better crunchy, so it all depends on what you like. You could also use any ice cream flavor you want too or use several flavors. Another fun idea is rolling the outsides in sprinkles or mini chocolate chips. I rolled my sandwiches in the mini chips that you see on the plate and that was a nice addition.
